Going wheat free doesn’t mean you have to give up all your favorite foods. These coconut flour pancakes are proof. I found this recipe on the “Nourishing Days” website about 5 years ago and have been making them ever since. They’re a weekend tradition at our house and are THE BEST coconut flour pancakes you’ll ever have. The recipe is pretty simple and quick to throw together. I smother them with fresh whipped cream (see the recipe below and watch my video on making fresh whipped cream) and then top fresh berries. I don’t put any maple syrup on the pancakes because I use a little in the whipped cream, also the berries make it sweet enough for me.
If you don’t put fresh whipped cream on your pancakes, you’re really missing out on something special. The whipped cream is so easy to make and whips up with a hand mixer in about a minute. It’s tasty and a great way to make sure you’re getting some healthy whole fats. If you use raw cream like we do, it’s even better. If you can’t get raw cream where you live, try to find a heavy whipping cream that’s pasteurized using a low temperature and has nothing added to it but whole cream. I know, what else would be in a carton of cream, right? Well, just read the label and see.
